How do I keep track of where my enquiries are up to?

Go to the Enquiries tab and switch to the kanban view. Each enquiry sits in a column for its current stage, and those columns together make up a pipeline. This lets you see at a glance what is new, in progress, or waiting, and drag enquiries between stages as they move along.
